Peach and Mint Wedding Cake


Bottom Layer is the traditional vanilla cake 
with vanilla butter cream
and 
the top layer is German chocolate cake 
with traditional German chocolate cake icing with
chopped pecans and coconut


This was a bonus, always love when I have left over
cake and icing.
German Chocolate Cake!
I did finely chop the pecans and coconut so when I covered the wedding 
cake with the fondant it wasn't so lumpy.

Easy German Chocolate Cake
  • Ingredients
  • 1 package German chocolate cake mix
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 bx instant chocolate pudding mix (dry)

  2. Preheat oven to 350º. Mix the cake mix, buttermilk, oil, eggs and vanilla in a large mixing bowl on low speed for one minute until combined. Beat at medium speed for two minutes more. Pour into greased and floured 13 x 9 baking dish. Bake 38 – 42 minutes or two 9 inch round pans for 30 - 35 minutes - until the cake springs back when lightly pressed. Allow to cool completely on a wire rack before frosting.

German Chocolate Icing


1 cup canned evaporated milk
1 cup sugar

3 egg yolks, slightly mixed with a whisk
1/2 cup butter (real butter)
1 teaspoon vanilla
1 1/2 cups coconut
1 cup chopped pecans
Directions:Put butter in a sauce pan and let it melt.
Add milk, sugar, vanilla and whisk in egg yolks.
Cook and stir over medium heat until mixture starts to bubble and then cook for about nine (9) minutes stirring constantly.
Pour over coconut and pecans and mix.
